Lemon cookies recipe

Ingredients:

3 cups (12 oz/340 g) almond flour

1½ cups Stevia Extract

1 teaspoon baking powder

½ teaspoon salt 3 eggs (5.25 oz/149 g)

¼ cup (2 oz/57 g) melted unsalted butter .

¼ cup (2 oz/57 g) fresh lemon juice

1½ teaspoons lemon peel

½ teaspoon liquid stevia

Lemon Fondant Icing ingredients:

⅔ cup erythritol or Stevia.

2 tablespoon fresh lemon juice.

Cooking instructions:

1- Preheat the stove to 350°F (177°C).

2- Spray the oven pan with oil or put cooking sheet or use silicon mold.

3- In a clean dry bowl, put the almond flour, Stevia, baking powder, and salt and mix all these ingredients well.

4- In another clean dry bowl, whisk the eggs, lemon juice, lemon peel, melted unsalted butter, and stevia liquid together then mix all these ingredients well.

5- Add the flour mix to the egg mixture and mix them well with a huge spoon for 1 to 2 minutes to make a thick mixture.

6- Put oil on the palm of your hands and make balls of the cookies dough.

7- put the dough balls on the cooking sheets and leave about 3 inches of space between them.

8- cook them for 8 minutes until they become gold color and firm when you touch them.

9- make the lemon fondant icing In a clean dry bowl mix the erythritol and lemon juice and whisk well until mixed.

10 – put the icing on the top of lemon cookies.

11- let the cookies to cool completely.
